A local Southwestern restaurant chain, Dos Coyotes Border Cafe, is working on its second Folsom location at 2776 E. Bidwell St., Suite 100, in Broadstone Marketplace. Owner Bobby Coyote has signed the lease and aims to open around March. 1. This news was first seen in the Business Journal.

According to the business journal, the approximately 2,200-square-foot space was previously occupied by Rubio’s Coastal Grill, which closed in May 2024. Rubio’s other locations soon closed as well and the company filed for a Chapter 11 bankruptcy.

To compensate for old Rubio customers in love with the fish taco, Dos Coyotes specifically came up with a special fired fish taco that has the crunch of Rubio’s old classic with a more elevated approach. Meanwhile, those familiar with Dos Coyotes’ regular menu can expect all their favorites at the new location.

“We turned 34 years old on January 5,” Coyote told What Now Sacramento over the phone, expressing his excitement for the new location.

To expedite the opening process, Coyote is transferring the restaurant’s liquor license from its current Folsom location to the new one opening in Broadstone Marketplace. The original location will then re-apply for a liquor license.

Serving ranchero cheese enchiladas, tacos, seafood burritos, quesadillas and salads and other Southwest classics, Dos Coyotes Border Cafe currently operates 11 restaurants throughout Northern California. While some of these locations are licensed or franchised, Coyote confirmed with What Now Sacramento that the second Folsom location will be operated by him directly.
