A longstanding North Placerville restaurant is set to return, bringing its homemade Mexican flavors back to the community.
Freshmex-Express, located at 3970 Missouri Flat Rd, Suite H in Prospector’s Plaza, was forced to close in August 2024 after a fire destroyed most of the restaurant’s interior. Since then, founder Rafael Garcia and his team have been hard at work rebuilding, and a reopening is finally in sight.
“Freshmex is reopening in 2026,” the business announced on social media. “We’re rebuilding with a fresh start, an updated menu, and a better experience for our community.” While prices are still being finalized, the team promises exciting menu additions and upgraded dining experiences.
Founded in 2002, Freshmex-Express is celebrated for its “homemade Mexican meals, crafted from Grandma’s recipes.” Since the closure, the eatery has continued operating through catering and its food truck, bringing Freshmex flavors directly to local events and neighborhoods.

At the rebuilt Prospector’s Plaza location, guests can expect classic Mexican favorites, from handcrafted burritos and bowls to tacos, quesadillas, and salads. The upcoming menu will feature fan favorites like the Freshmex Burrito, Baja Mango Shrimp Salad, Carne Asada Plate, and house-made salsas including Chile de Árbol and Tomatillo Verde.
“Our story begins in Mexico City and Jalisco, where the recipes, flavors, and values that shape our kitchen were first learned,” the restaurant’s website reads. “The food we serve today reflects what our parents were taught growing up: cook with discipline, prepare everything fresh, and serve with pride… In 2024, a devastating fire changed everything. We lost more than a building — we lost a place filled with memories and years of dedication. But while the structure was gone, the heart of Freshmex remained. Now, we move forward. 2026 marks a new chapter.”
Garcia’s team says the rebuild is more than structural. “We are strengthening our systems, refining our execution, and building with greater discipline — while protecting the authenticity that defines us,” the website notes.
The restaurant also promises more health-conscious options alongside the bold flavors that have made Freshmex a community favorite. Co-owner Jan Garcia told What Now Sacramento that such offerings will include Quinoa Cilantro Lime as an alternative base, along with other “fresh customizable additions that reflect how we’re evolving while staying true to our roots.”
An exact reopening timeline has not yet been announced. Freshmex-Express fans are encouraged to sign up for email updates to be the first to hear about reopening announcements, special promotions, and exclusive offers.
“Freshmex exists because of sacrifice,” the website continues. “It stands because of Placerville. And it grows because we are committed to building smarter for the future.”
