A Pacific Northwest sushi concept known for its signature sushi burritos is heading to Roseville.
IJ Sushi Burrito is opening its first California location in the Westfield Galleria at Roseville at 1151 Galleria Blvd, according to the company’s website and recent business filings. A report from the Sacramento Business Journal notes that the restaurant is expected to join the dining terrace at the mall in the fall of 2026.
As the name suggests, IJ Sushi Burrito specializes in sushi burritos—generously sized nori-wrapped rolls packed with rice, proteins, vegetables, and house sauces. The menu features nearly 10 signature options, including Fiery Chicken, Dancing Salmon, and a fully Vegan burrito, alongside poke and fresh salad bowls. Guests can also go the custom route, building their own sushi burritos, poke bowls, or salads from a mix of proteins, toppings, and sauces.
Founded by Hua He in 2021, IJ Sushi Burrito has grown steadily over the past few years. The fast-casual chain currently operates eight locations across Washington, Oregon, and New Jersey, with several more currently in development. The Roseville outpost is part of a broader California expansion, with four locations planned statewide.
