Pancho Villa BBQ & Catering is finally smoking its way toward a permanent home.
The local barbecue food truck has been working on a brick-and-mortar location at 6716 Madison Ave, Suite 127 in Fair Oaks since 2022, but the road to opening has been anything but easy.
Owners Luis and Tammy Chavez, along with pitmaster and co-owner Alberto Hernandez, have held the building for over three years, weathering a gauntlet of delays involving architects, contractors, and engineers.
In May, the team announced that their last set of plans had been approved. “We are halfway there and still having a few items left and a handful of inspections to go,” they shared in a Facebook update.
Founded in 2020, the Pancho Villa food truck is known for its slow-cooked meats and Hispanic fusion fare. The menu features a variety of smoked barbecue plates, tri-tip and pulled pork tortas, burritos, housemade sides, and desserts.
In addition to the signature dishes, the new location will serve local craft beer and wine. Catering will remain a key part of the business, offering everything from taco buffets and fajitas to chicken legs and pulled pork.
If all goes to plan this time, the team hopes to welcome guests in fall 2025, they confirmed with What Now Sacramento. In the meantime, you can follow Pancho Villa BBQ & Catering on Facebook to keep up with their food truck schedule.
“We appreciate so many of you supporting us on this ‘three-year journey’ dealing with every obstacle you can think of that has been thrown our way,” they wrote in a message to the community.
