Paris Banh Mi is gearing up to join The Davis Collection this winter.

Franchisee Liem Nguyen confirmed that the casual Vietnamese bakery and café will open at 855 Russell Blvd, Suite 160, taking over a roughly 1,400-square-foot space at the shopping center.

Known for its generously stuffed banh mi sandwiches, the chain serves classic French baguettes packed with Vietnamese fillings such as grilled pork, lemongrass chicken, cold cuts, and tofu. Guests can also order their sandwiches on croissants or burger buns.

In addition to savory items, the menu features a variety of desserts, including cake slices, cheesecake, assorted pastries, and a wide range of Vietnamese drinks such as boba teas, matcha, iced coffee, and fruit slushes.

According to the company’s website, Paris Banh Mi currently operates 50 locations, including two other California outposts in Elk Grove and Clovis. Nguyen, who also operates the Elk Grove café, said he’s opening the new location in partnership with Ken Tran and Nhi Tran.

Paris Banh Mi Davis is slated to open in early January 2026 and is now hiring full- and part-time baristas, cashiers, and kitchen staff. Applicants can send resumes to [email protected] for consideration. Be sure to follow the eatery on Facebook and Instagram for the latest updates.
