Roosters Breakfast and Mimosas is Expanding its Original Location

Combining an additional space into the current restaurant with a new bar

Roosters Breakfast and Mimosas has filed permit applications for a remodel and expansion at its flagship location at 5493 Carlson Dr, according to city records. The remodeling includes an expansion plan of combining a former 882-sqft barbershop space into Roosters’ current restaurant space. After remodeling, Roosters will have a new bar and outdoor dining area added under the current conditions.

Roosters Breakfast and Mimiosas is a Mexican-American fusion restaurant owned by Teresa and Martin Gonzalez. The restaurant serves Mexican breakfast items such as alambre, crepes, and omelets, and is famous for their over-a-dozen mimosa options. The flagship location is located inside the River Park Shopping Center on Carson Drive and the remodeling with allow the space to serve even more customers.

The remodeling is only part of the latest growth Roosters have seen. Earlier this month, Roosters Breakfast and Mimosas signed a lease for a second location at 1379 Garden Highway, formerly Pearl on the River. The second Roosters location will be called Roosters on the River and is expected to open in December. By the time of this coverage, the owners weren’t available to provide comments.

Roosters is currently awaiting permit approval for the remodeling. And did not provide an anticipated timeframe for the project.
