Spitz Bringing Mediterranean Street Food to Roseville in 2026

The fast-casual Mediterranean franchise is replacing Pieology Pizzeria in Roseville’s Rocky Ridge Town Center.

A fast-casual Mediterranean franchise is joining the local dining scene.

Spitz Mediterranean Street Food is set to take over the former Pieology Pizzeria space at 2030 Douglas Blvd, Suite 30, in Roseville‘s Rocky Ridge Town Center. The brand takes its name from the vertical rotisserie—called a “spit”—used to cook meats like lamb and chicken, a method that locks in juices and develops the savory flavors central to Mediterranean cuisine.

Founded in 2006 by CEO Bryce Rademan and fellow Occidental College alum Robert Wicklund, Spitz has grown to nearly 30 locations across nine states, with several more in development. From the beginning, the duo’s mission has been to deliver a healthier, modern spin on Mediterranean street food.

Rademan told What Now Sacramento that franchisees Jaskarn Sibia and Sandeep Gill will operate the new restaurant, which is expected to feature Spitz’s signature lineup of doner wraps, bowls, and baskets, along with loaded fries, fresh salads, and gyros.

“What really drew us to Spitz was the food,” said Sibia and Gill in a statement. “We tried it once and had to go back the very next day. Once we got the chance to visit the locations, we were sold. The unique, vibrant, and fun atmosphere of the stores made it clear this was something special we wanted to bring to our own community.”

According to the company, every sauce is made in-house, chicken is fresh-cut and marinated daily, and vegetables are hand-prepped each morning. With plenty of vegan, gluten-free, dairy-free, and kid-friendly options, the menu is designed to appeal to a diverse range of diners.

Rademan says he’s confident Sibia and Gill will “knock it out of the park” when Spitz Mediterranean Street Food makes its Roseville debut sometime in the first quarter of 2026. The duo also plans to open several more locations in Northern California, though exact addresses and opening timelines have yet to be announced.
