Taiwanese Bakery Chain 85°C Moves Closer to Roseville Debut

A Taiwanese bakery and café chain appears to be inching closer to opening its Roseville outpost.

New permits filed with the city indicate progress at the forthcoming 85°C Bakery Cafe, which has been in the works for more than a year. According to a previous report from the Sacramento Business Journal, the internationally recognized bakery signed a lease for roughly 3,000 square feet at 445 Roseville Square, Suite 100, in the expanding Roseville Square Shopping Center at the corner of Douglas Boulevard and Harding Boulevard.

Founded in Taiwan in 2003 by Cheng-Hsueh Wu, 85°C Bakery Cafe was built around a simple belief: gourmet pastries and high-quality coffee shouldn’t be reserved for luxury hotels or special occasions. After visiting a five-star hotel and noticing that pastries and drinks were priced “way too high for people to enjoy on a whim,” Wu set out to create a more accessible café experience.

Today, the brand has grown into a global powerhouse with more than 1,000 locations worldwide. Its first U.S. store opened in Irvine, California, in 2008 and quickly became a sensation, drawing long lines and thousands of reviews within months.

The bakery is best known for its signature sea salt coffee, along with a wide selection of Asian- and European-inspired pastries, breads, and cakes. Stores typically operate with a fast-casual, self-serve format in which guests select pastries from trays before ordering handcrafted drinks at the counter.

Menu highlights often include soft milk breads, brioche-style buns filled with custard or taro, marble taro loaves, egg tarts, and an array of fresh cakes, alongside espresso drinks, teas, and specialty beverages. The brand’s name reflects its philosophy, as 85°C (185°F) is believed to be the ideal temperature for brewing and serving coffee to bring out its fullest flavor.
