Chilaquilers, a brand-new company specializing in chilaquiles, is preparing to start its journey by opening two permanent pop-ups throughout San Diego.
The company, owned and operated by Karen Zuñiga and Edgar Flores, is getting ready to start selling with an outside enclosed pop-up in Vista at 785 Shadowridge Drive, according to documentation submitted to the San Diego Department of Environmental Health and Quality. Flores tells What Now San Diego that they are waiting for the final permits before being able to set up at this site. Flores says the company will also set up another enclosed canopy pop-up site in Chula Vista.
This is a massive achievement for the company, which operates out of 330 Roosevelt Street as a food delivery service. Flores tells What Now San Diego that Chilaaquilers already has a large client base that requests a physical business. As a result, the owners are setting up these permanent pop-up sites for quick orders and pick-up locations. Once these two pop-up sites are open, the owners hope to expand into physical locations eventually. Until then, they will grow their business and clientele with these pop-ups.
When the new business opens, customers can expect a customizable experience that allows them to order chilaquiles however they want. To start your order, choose one of four salsas, including roja, verde, chipotle, and mole. Afterward, you select a protein, grilled chicken, steak, chorizo, or scrambled eggs. Finally, Chilaquilers will have a handful of toppings, such as sour cream, cheese, onion, or cilantro. As a result, the business creates a one-of-a-kind chilaquile experience that hasn’t been seen in San Diego before.
