Cowboy Star Team Launching She Rode West

The new restaurant is planned to open in mid to late summer 2026 in Bankers Hill

She Rode West, a new sister restaurant from the team behind Cowboy Star, is preparing to open in Bankers Hill at the Park Summit building on Fifth Avenue and Upas Street.

The new restaurant is planned to open in mid to late summer 2026, according to San Diego Magazine. She Rode West is not an additional Cowboy Star location but a separate concept inspired by the idea of a Western heroine. The restaurant will occupy a 3,100-square-foot ground-floor space within a new residential building. Customers can expect a more approachable, all-day dining experience compared to Cowboy Star’s steak-focused format.

Cowboy Star was founded in 2008 in San Diego’s East Village by Jon Weber, Angie Weber, and chef partner Victor Jimenez. The independent steakhouse has operated for 17 years and is known for its dry-aged program, including a 35-day bone-in ribeye.

Ownership of She Rode West includes Jon Weber, Angie Weber, Victor Jimenez, and Andrea Thurston. Thurston serves as the group’s director of operations and has worked with the team for approximately ten years. This marks the first project in which the group has partnered as a four-person ownership team.

The restaurant’s design is being handled by Paul Basile of Basile Studio, who also led Cowboy Star’s 2020 remodel. Because the space is part of a newly constructed residential building, the design is expected to feel brighter and more open, with 20-foot floor-to-ceiling windows defining the dining room. This will be an excellent landing space for a neighborhood-focused restaurant.

The menu at She Rode West will be seasonal, shareable, and less formal than Cowboy Star’s offerings. While a small number of curated steak options will be available, the menu will not be steak-driven. Planned dishes include reimagined classics such as Cobb salad and beef carpaccio, alongside a beverage program featuring cocktails, wine, beer, and non alcoholic options.
