A new Western-inspired bar and restaurant named Doc Holliday’s is set to open at 2547 San Diego Avenue in San Diego’s Old Town.
The 2,000 square-foot concept will open in the space formerly occupied by Taco Loco, Bolt Brewery’s tasting room, and O’Hungry’s, according to SanDiegoVille. Doc Holliday’s is the latest concept from Pietro Busalacchi, known for his work on Trattoria Don Pietro, El Sueño, and Tako Vibrant Sushi. Busalacchi confirms this information with What Now, saying he hopes to open Doc Holliday’s in mid-August 2025.
The restaurant will feature a Western-style tavern and grill atmosphere, focusing on a craft-forward drink menu with elevated cocktails and flasks. The food offerings will include smash burgers, upgraded mac and cheese, inventive appetizers, and weekend breakfast service, with plans to potentially expand breakfast to daily service. Additional beverage options will include milkshakes and “dirty sodas.”
This will mark the Busalacchi family’s fourth venture in Old Town, further expanding their culinary presence in the historic district. Their first concept, Trattoria Don Pietro, is an Italian restaurant renowned for its classic, comforting dishes and authentic flavors, offering a traditional dining experience that focuses on fresh ingredients and rustic recipes. El Sueño, another successful project, is an upscale Mexican restaurant celebrated for its opulent atmosphere and inventive takes on regional Mexican cuisine, blending rich flavors with a sophisticated presentation.
Tako Vibrant Sushi brings a lively, modern energy to the neighborhood, featuring a rooftop setting that offers creative sushi rolls and fusion dishes appealing to a younger, trend-conscious crowd. Together, these diverse concepts showcase the Busalacchi family’s versatility and commitment to quality in San Diego’s dining scene.
