Classic Breakfast Spot to Join Scripps Ranch Village Shopping Center

A new restaurant is in development at Scripps Ranch Village Shopping Center, taking over the space previously occupied by Junction Bar and Grill. Junction Bar is relocating to the brand new development called The Hub at Scripps Ranch. In their place, Fay’s Diner & Cafe is preparing to debut. 

What Now San Diego spoke with owner Joshua Anderson who says we can expect a classic diner with a 1950’s vibe. The family owned restaurant is named after Anderson’s mother, Fay, and will bring to mind a hearty breakfast at Grandma’s house. 

Featuring homestyle recipes, guests can indulge in classic dishes like Steak and Eggs, Biscuits and Gravy, and scratch-made baked goods. 

“I visited local egg farms to find the best eggs. The chickens are pasture-raised and fed with no soy products which yield the richest, brightest yolks,” shares Anderson. The same process was taken for dairy and bread in order to find the best products to serve. Fay’s Diner has partnered with local bread distributor Prager Brothers to complement the other locally sourced ingredients. 

Anderson and family are putting final touches on Fay’s Diner & Cafe, which is expected to open in December 2022. Diner hours are 6am-3pm daily, accommodating families looking to have at least one meal together at home each evening. Their beer and wine license is forthcoming by the new year. A website and social media for Fay’s Diner & Cafe are in the works ahead of their opening.
