A new Baja-San Diego fusion bar and restaurant, Una Mas on Adams, is set to open at 2611 Adams Avenue in San Diego’s University Heights/North Park.
Previously, What Now reported that a new “German-style” beer garden, tentatively named Adams Avenue Beer Garden, is preparing to debut in University Heights at 2611 Adams Avenue. While initially this concept was expected to open in Fall 2024, the developer has decided to take a new direction. Now, Collin Corrigan, who founded Ensenada’s popular Cerveceria Transpeninsular craft brewery, plans to open Una Mas on Adams. Corrigan tells What Now that Una Mas on Adams is expected to open in the next 30-45 days.
What Now San Diego spoke with Collin Corrigan to understand what customers can expect when Una Mas opens its doors on Adams Avenue. The new spot aims to bring the vibrant flavors of Baja to San Diego, offering unique dishes like ceviche rolls and a Baja twist on classic favorites, along with other fun food highlights. Some items on the menu include a Crunchwrap Supreme, topped with local catch ceviche and salsa verde; a Mexican Pizza made with onion soubise, lamb merguez, and salsa roja; and Loaded Nacho Fries, featuring yucca fries, avocado ranch, and pickled crab.
Designed to be both family- and pet-friendly, Una Mas is geared toward attracting a young, community-oriented crowd. The space will feature a permanent food truck outfitted with a fully built-out kitchen, ensuring both mobility and quality. Una Mas will also highlight three breweries from Baja, paying homage to the pioneers of the craft beer movement and blending the culinary and cultural spirit of the region. If that wasn’t enough, the concept is working with Danny Romero, who is known for contributing to other local concepts such as Wormwood and Ponyboy.
Una Mas on Adams will be 3,500 square feet, split between 1,000 square feet inside and 2,500 square feet outside. The new concept blends the laid-back beach vibes of Baja California with the local energy of San Diego. Collin Corrigan, who has strong ties to San Diego and Mexico, is building a space where people can come together over good food and drinks. Outside, customers can expect to find fire pits, shady seating areas, and spots for families to relax. As for drinks, there’ll be 20 taps pouring some of the best beers from San Diego, plus brews from Ensenada, Mexicali, and Tijuana.
