Mission Bagel Preparing to Debut Food Truck

The owners are waiting on the health department and hope the food truck will open sometime next month

Mission Bagel, a brand-new concept offering fresh, handmade bagels, is preparing to open a food truck in San Diego.

The company, co-owned and operated by Gabe Rubin, is putting on the finishing touches and hopes to join the recent bagel revolution by launching a food truck to serve his delicious bagels, according to San Diego Magazine. Rubin tells What Now San Diego that he is waiting on the health department and hopes the food truck will open sometime in March 2025. When it opens, customers can expect authentic, no-nonsense bagels and schmears. At the moment, there are no plans for a brick-and-mortar.

“We like the food truck to start because it allows us to be flexible in testing out the concept and deliver on our Mission to provide quality bagels with the speed to satisfy someone heading to the office or hosting a birthday party,” Rubin tells What Now San Diego. “We hope the truck will be successful and that San Diegans have the same love for bagels that we do. We feel there is a need for more quality Bagels in San Diego, and look forward to our customers letting us know what is the best way to provide that.”

This is a massive accomplishment for Rubin and co-owner Benny, who both grew up Jewish. For them, bagels weren’t just food; they were a tradition, a comfort, and a connection to our roots. Between the two of them, they’ve eaten more bagels than they’d care to admit. After 20 years of living in sunny San Diego, one thing became clear: this city needed better bagels—the chewy, golden, perfectly schmearable kind. As a result, the company has made it their Mission to bring the real deal to America’s Finest City.

“Gabe got the ball rolling during the pandemic, starting a bagel delivery and catering business that quickly earned a loyal following,” according to the company’s website. “Benny, forever the bagel enthusiast, was all in. Together, they decided it was time to take San Diego’s bagel game to the next level—on wheels. And so, Mission Bagel was born. We’re bringing authentic, no-nonsense bagels and schmears to the streets with flavors that’ll make your taste buds do a happy dance. Swing by the truck, grab a bagel, and let us share a little slice (or schmear) of our childhood with you.”
