For years Pete Cich and his restaurant group Grind and Prosper have been influencing the San Diego restaurant scene. Bringing bars and eateries like Miss B’s Coconut Club and Park 101, the restaurant group is no stranger to providing open-air wining and dining for San Diegans.

So what’s new on the Grind and Prosper plate? According to Eater San Diego, the restaurant group is currently in the process opening a restaurant and rooftop bar in Oceanside’s The Brick Hotel. The hotel, remodeled in 2020, is taking over a building first constructed in 1888. According to the hotel’s website, the building, one of the oldest in Oceanside, “combines original detailing such as the gorgeous brick façade with modern furnishings and design.” Oceanside Properties is behind the renovated hotel.

An Instagram post shared by The Brick Hotel on May 15th of this year is captioned, “one of the reasons for all the structural steel installed was in order to put a hundred people at this rooftop bar.” Eater San Diego reports the 2,100 square foot rooftop will be home to Grind and Prosper’s CocoCabana, a Carribean-style cocktail bar. So go ahead and put more open-air wining and dining on your list of things to do once this hotel is up and running.

Correction: a previous version of this story erroneously stated Grind and Prosper was behind the renovations and opening of The Brick Hotel.
