Akita Sushi is opening at the Almaden Plaza on 5353 Almaden Expressway in San Jose. The sushi restaurant is moving into unit M-22, a 1,448 square-foot space that is currently under construction for a full build-out. Co-Owner Alberto Lopez confirms that they plan to open in late November.

Newly outfitted with a full kitchen, Akita will introduce new items to their menu such as curry, tempura, fried chicken karaage, noodle soups, and a wider selection of fried sushi rolls. Loyal fans can also expect the same menu served at Akita’s original Santa Clara location.

Akita was started by Alberto Lopez and Salomon Arias, who discovered a passion for sushi-making while working as chefs at their local restaurants. They began by opening Akita Sushi Gourmet Inc. in 2014 and became known throughout the Bay Area for their sushi and teriyaki chicken.

The success spawned from their food trucks led to the opening of their first Akita Sushi restaurant in September 2020. In total, they will be operating two restaurants, in addition to two Akita Sushi food trucks and a spin-off food truck called West Poke.

As they prepare to open Akita Sushi’s second brick-and-mortar, they are currently hiring employees with sushi experience. One may expect that the new San Jose location will have the same hours as Santa Clara, which are Monday through Saturday from 10:30 a.m. to 9:30 p.m.
