Hinodeya Ramen & Bar to Open Union Square Location

The dashi-style ramen restaurant is opening its fourth location this fall.

Hinodeya Ramen & Bar, which debuted in Japantown back in 2016, is gearing up to open a new location at 219 O’Farrell St. in Union Square. This will be the third San Francisco location for Hinodeya, which also has a location in Dallas, Texas, making four total restaurants overall for the Japan-based chain. 

Chef and CEO Masao Kuribara comes from a culinary family, whose first restaurant opened in the Saitama prefecture of northern Tokyo in 1885. There, they serve a popular dashi-style ramen that is made with a fish stock, as opposed to traditional Tonkotsu pork. 

“Every ingredient has its umami, but different ingredients have different umamis,” Kuribara told Hoodline in 2016. “Dashi has a particular kind of umami that we believe has a more powerful flavor.” We can expect this particular type of ramen at the new Union Square location. 

Kuribara confirmed with What Now San Francisco this week that the upcoming restaurant is under construction and is waiting for several permits. If all goes according to plan, he hopes to open by mid to late September.
