Boichik Bagels is the official new tenant of an 18,000 square-foot industrial space at 1225 Sixth Street in the Berkeley Gilman district. Owner Emily Winston recently announced plans for a Boichik factory and while there is no firm opening date, the entire process is projected to take a little more than a year.
The factory will include a full retail space where customers can purchase and enjoy their bagels onsite at a large outdoor patio space. Boichick Bagels currently makes all their bagels in-house at their current 1,200 square-foot bakery on 3170 College Ave.
Winston tells What Now San Francisco that the factory will be a great opportunity not only to scale up on production but also to expand their menu with rugelach, challah, cookies, cakes, and more. There is already a lengthy list of potential wholesale partners and future plans for additional Bay Area locations.
Winston is most excited for customers to be able to see bagels being made in real time through a window into the production kitchen. “That’s a big thing I like, transparency. You’re going to see what we’re doing. We’re not hiding anything. We’re legit and it’s also really cool equipment,” she previously told Eater SF.
According to the Boichik website, bringing these New York-style bagels to the West Coast became a necessity after Winston, a New Jersey native, learned that her favorite H&H Bagels was shut down in 2011. Devasted, Winston set out on a five-year quest to recreate the bagels she grew up with and began serving them out of her Alameda home in 2017. It wasn’t long before her success led to the opening of her first brick-and-mortar location in 2019.
