J’s Kitchen is slated to open soon in Bellingham, located at 1307 11th Street, confirmed by the owner Justin Valle.
“We would love to be able to open next month, but we will likely be opening our doors within the new few, but no locked-in opening date yet,” Valle told What Now Seattle.
“Our goal is to be able to provide something different. We’re going to be focusing on Puerto Rican food, which is what I grew up eating and making, and am excited to bring to the area.”
Justin expressed that J’s Kitchen will be a family, all-inclusive environment, where everybody will be welcomed in a fast-casual dining setting. The menu options will be focused on classic Puerto Rican dishes, such as empanadas, Cubano, bowls with rice and beans, sandwiches, and will build from there with time. J’s Kitchen will be using family recipes, passed down from Justin’s grandmother, to his mother, to him for an extra touch.
J’s Kitchen will specifically provide tostones as a main focus of their menu. For those that are unfamiliar, tostones are slices of green plantain, fried twice over, and are commonly seasoned with a light amount of salt. Plantains are also often served with a red shrimp sauce (Camarones guisados) or chicken broth on the side.
