Lotus on the Beach: A New Asian Fusion Experience Set to Bloom at Former Pegasus Pizza Location

Lotus on the Beach comes from J and L Asian Fusion LLC, according to the permit filing.

According to a recent permit filing, Lotus on the Beach will open at what was previously Pegasus Pizza, located at 2768 Alki Ave SW.

A representative of Lotus on the Beach was not immediately available for commentary upon What Now Seattle’s request.

According to Lotus on the Beach’s Instagram biography section, the new Asian fusion spot will open sometime in 2024.

According to an article from Westside Seattle, “Already the owner of Alki Pho, Lynda Nguyen, will serve Asian Fusion cuisine and will seat about 65 people. Lotus on the Beach will have a full bar and also offer “a small bubble tea” area so people can take it to the new and nearby Alki Arcade.”

“Nguyen said, “I asked my interior designer to make it very modern and welcoming. I think they did a great job and I’m excited to bring this to Alki.” The interior design was done by Catch Design Studio. It’s so new that they are still working on a logo that will combine purple (the color of the Lotus flower) with green.”

“Asian Fusion typically uses traditional Asian-style ingredients, dishes, and techniques that then combine flavor and ingredients you might find in traditional Mexican, American, or other Asian-style dishes,” the article adds.

According to an article written in June of 2022 by West Seattle Blog, Alki Pho Bar, Lynda’s other restaurant venture, officially opened. The proprietors are listed as Lynda Nguyen and Bien Phu Le. Alki Pho Bar will be open 11 am-9 pm Sundays through Thursday, 11 am-11 pm Fridays and Saturdays, the article adds.
