According to a recent permit filing, Mercurys Coffee Co will soon expand with another location in Bellevue at 500 108th Ave NE #1A1.
“We just had our 25th anniversary in December of 2023. The interior will have a lot of the finishes that are similar to our Bellevue roastery, and the new location will have a lot of our same scratch-made food and bakery items that reside at our flagship Bellevue location,” President Morgan Harris told What Now Seattle.
According to Mercury’s website, the new location resides in Downtown Bellevue at the “bottom of the City Center Building.” It is slated to open sometime this year.
“We are a local company founded in Woodinville, Washington, by Morgan Harris in 1998. Over the years, we have grown to 12 Eastside locations and 225(or so) wonderful people making the magic happen.”
