Salt & Straw to Open First Bellevue Shop This Spring

The Portland-based ice cream brand marks its 54th location nationwide.

A Portland-based, craft ice cream shop with a devoted following is gearing up to open a new location this spring.

Salt & Straw, founded by cousins Tyler and Kim Malek, is set to open its first-ever Bellevue location at 10415 NE Fourth St., Puget Sound Business Journal reported.

The idea for the shop grew from a desire to create a neighborhood place where you could run into neighbors, spend time with family or simply treat yourself, according to the website. 

The scoop shop sources its ice cream from fifth-generation, family-owned Scott Brothers Dairy, where cows are grass-fed and raised without hormones or antibiotics.

Best sellers include chocolate gooey brownie, double fold vanilla, freckled mint chocolate chip, sea salt with caramel ribbons, and salted malted chocolate chip cookie dough.

The shop also offers a rotating monthly menu with new flavors, ice cream cakes and the Tacolate. Created in collaboration with Taco Bell, the Tacolate features cinnamon-ancho ice cream in a waffle cone taco, dipped in dark chocolate and finished with puffed quinoa.

Salt & Straw saw rapid growth in 2025, opening three new locations in Seattle, Queen Anne and Redmond, with a goal of opening eight to 10 stores each year. Malek told the outlet the brand plans to continue expanding locally, with a focus on Seattle and Tacoma.

The scoop shop currently operates in Arizona, California, Florida, Nevada, New Hampshire, New York, Oregon and Washington, with the upcoming Bellevue opening marking its 54th location nationwide.

Salt & Straw has not announced an official opening date, but fans can visit the website and follow along on Instagram and Facebook.
