The Cat & Rabbitt Returns to Tacoma With New Cake and Sandwich Cafe

Popular cake-by-the-slice shop teams with Sliced for a cafe at the Museum of Glass.

The Cat & Rabbitt, a popular cake-by-the-slice bakeshop, is set to return to Tacoma this spring.

The shop, co-owned by Julia Brown and Terryn Moser, opened as a walk-up window on Sixth Avenue in 2020 before closing the location in spring 2024. It later debuted a Puyallup shop in summer 2024.

“Julia, the other owner, her middle name is Catherine, so she’s Cat. My last name used to be Abbitt, so I’m Rabbitt,” Moser told What Now Seattle.

Now, the team is partnering with chef Kyle Campisi of Sliced to open a cafe inside the Museum of Glass, marking a second location.

“We’re teaming up with our good friend Kyle. He has been an executive chef around Tacoma for quite a while. He approached us and asked if we would like to create a little sandwich shop slash cake shop,” Moser said.

Sliced is a New York–style deli offering handcrafted sandwiches made with high-quality ingredients, along with coffee and other cafe staples.

The new space will combine elements from both the brands. 

“We’re working on the interior together. It’s going to be a little bit of both worlds. You’ll see some of our decor in there and some of Sliced as well,” she said.

The cakes, which rotate monthly, will be displayed whole so customers can view them before they are sliced.

April’s cake lineup features Dark & White Chocolate, made with chocolate cake, white chocolate pastry cream and white chocolate cream cheese buttercream; Lemon Lavender Poppyseed, with poppyseed cake, lavender soak, lavender mascarpone whip and lemon curd with lavender cream cheese buttercream; and Chewy Caramel Coconut, with vanilla cake, housemade caramel, toasted coconut, housemade shortbread and shortbread cream cheese buttercream.

“We do have quite a few popular cakes that we have based on the month. This is our sixth year in business, so we have loyal fans who wait all year for certain flavors,” Moser said.

While they offer monthly staples, they also “go off of what’s in season” and “what works with ingredients that we can find at the moment,” keeping things creative.

The Cat & Rabbitt will also bring back its infamous cinnamon rolls, which were a hit at the pop-up window.

To complement the sweet treats, the cafe will serve Caffe D’arte coffee, mirroring the offerings at their Puyallup location.

Moser said the team is looking forward to the expansion.

“We’re most excited to be back in Tacoma, where we got our start. When we had our little walk-up window, customers obviously weren’t able to come inside. We’re excited that in this new spot, they’ll be able to. They’ll not only have an option for a delicious lunch, but they’ll be able to see the water, see some beautiful art, and have a slice of cake,” she said.

The Cat & Rabbitt is slated to open in April, pending permits. Its debut, along with Sliced, will likely be staggered. Visit the website and follow along on Instagram and Facebook for the latest updates.
