According to a recent permit filing, Last Drop will be expanding with a new location located at 517 E Pike Street STE A.
“The goal is to open in the beginning of 2024, hopefully in late January. The model of Last Drop Capitol Hill will be the same as my other store up in NE Seattle. It’s a beer and wine store/beer hall hybrid. There will be lots of beer to go and a bar with 20 taps, wine options, and champagne,” the owner, Seth Howard, told What Now Seattle.
“We won’t have any food but you can bring outside food, with lots of choices in the area! We are dog-friendly, have sports and weird animal videos on TV, a turntable sound system, and no kids. Overall, we are an approachable neighborhood hangout.”
The company website adds more information, stating, “Featuring bottles and growlers to go, The Last Drop hopes to fill a void that exists between Lake City Way and Roosevelt. Today if you take a peek into this recently transformed wine shop, formerly Jacks Cellars, you might see the familiar face of publican Seth Howard. Since 2003, Seth has exhibited his wisdom of what a gastro pub is. Not satisfied with running one pub in Pioneer Square and Maple Leaf, he jumped at the chance to purchase the space next to his, Hudson Public House.”
“With an emphasis on maximizing the use of the Lake City Way arterial, The Last Drop hopes to supply craft beer enthusiasts with a location in their neighborhood. Currently, the hours of operation are much like the beer selection, a work in progress. Starting with a weekly schedule of Monday to Sunday 2 pm to 10 pm, you will be able to brown bag a few beers or grab a growler of the latest draft beers.”
“During our visit, the list of beers featured on the shelves was a combination of the sought-after Russian River, Dogfish Head, and Firestone Walker to the stock of Ninkasi and Deschutes. For us, we elected to grab a bottle of the Bitches Brew from Dogfish Head, given that we enjoyed our experience with this Imperial Stout previously. We won’t tell you about some of the other rare beers that he has featured in the store but we can say that you will absolutely not be disappointed that you visited The Last Drop Bottle Shop!”
