Chef Matt Baker to Open Non Se, a Mediterranean Wine Bar, near Union Market

Baker is well-known for his work at Gravitas in Ivy City, and Michele's in the Downtown area.

Matt Baker will soon be opening a Mediterranean wine bar, called Non Se, at 300 Morse St NE, confirmed by Baker himself.

“We’re very excited to be opening this restaurant soon. We’ll make sure to circle back once we have more information to provide,” Holly Barzyk, Matt’s PR Representative, told What Now Washington DC.

While an official opening date has yet to be confirmed, according to his interview with Axios, the inspiration behind the name “Non Se” stems from Baker’s personal journey in search of the perfect wine bar concept. Failing to find an existing establishment that met his expectations, he decided to embrace the Italian slang term, which translates to “I don’t know.” However, far from being uncertain, Non Se embodies a carefree attitude that suggests, “You don’t always know what you’ll get, but you know it will be good.”

Non Se promises to offer a delightful experience for patrons, with a diverse selection of coastal wines taking center stage. Wine lovers will have the opportunity to explore a curated collection of Mediterranean varietals, carefully selected by Baker himself to complement the menu selections. The wine bar will also feature an enticing antipasti bar, showcasing an array of Mediterranean-inspired small plates. Guests can indulge in a selection of delectable cheeses, cured meats, marinated vegetables, and other offerings.
