Over a year ago Loudoun sushi fans received news that made their mouths water; a Fairfax restaurant that specializes in the dish had plans to open a new storefront in the neighborhood. While it has taken quite awhile for the announcement to bear fruit, the patience displayed by local foodies is finally being rewarded. Sushi Cho has begun construction on its new Sterling location, reports The Burn.

Future regulars should not necessarily begin counting their eel rolls just yet; workers are actively clearing out the remaining evidence of 22000 Dulles Retail Plaza, Suite 100’s past resident. However, hints of Cubasi Bistro still remain. Once the space has been stripped, work can begin in earnest to turn the suite into a Sushi Cho.

In an additional favorable sign of the restaurant’s opening, Sushi Cho has an application in with the Virginia Alcoholic Beverage Control Authority for approval to serve beer and wine.

Sterling diners have reason to be excited by Loudoun’s newest Japanese eatery; the menu features more than 100 specialty rolls and a range of sushi and sashimi platters. Visitors who aren’t in a sushi mood can enjoy one of the restaurant’s teriyaki dishes.
