A collection of DC food luminaries is teaming up to fuse European sophistication to an American favorite. La Bonne Vache, a French bistro that will specialize in burgers, has applied for a liquor license according to The Alcoholic Beverage and Cannabis Administration.
The restaurant, which will be opening at 3265 Prospect Street, NW, is the brainchild of Rob and Rachel Aikens and Ari and Claire Wilder. La Bonne Vache will be taking over the space vacated by Booeymonger, and will provide ample indoor and outdoor seating for hungry patrons. The liquor license application states the eatery will seat 30 guests inside, and will feature a summer garden that can accommodate up to 11 customers.
The Wilders and Aikens are bringing a wealth of hospitality experience to their latest concept. Chef Rob Aikens worked with the celebrated restaurateur Stephen Starr to open Dandelion pub, an eatery that strove to craft the perfect cheeseburger. Restaurant designer Rachel Aikens has been overseeing the renovations of the historical space, determining the best ways to incorporate the building’s historical aspects into La Bonne Vache. The Wilders, who co-own DC institutions Chaplin’s Restaurant and Zeppelin, will be overseeing the drink program.
The restaurant’s founders announced their intentions for the space in April of 2023, however La Bonne Vache does not currently have an official opening date, stating only that it will be opening soon.
When La Bonne Vache opens its doors, its owners hope it will be a welcoming home to every demographic. Ari Wilder describes the vision to Eater Washington DC, saying “We all believe in how special this place is and everyone is on board with what we’re going to do here. We want to appeal to all walks of life—men, women, and kids.”
