A seasoned Chesterfield hospitality veteran is bringing his talents and a brand-new concept to Richmond. The Shaved Duck owner, Joe Kmetz, is opening Trouvaille in the Fan District in late winter of 2024, reports local media outlet Richmond BizSense.

Kmetz recently signed a lease for the 3,600 square foot space at 203 North Lombardy Street. A license application filed with the Virginia Alcoholic Beverage Control Authority states that the space will accommodate up to 100 customers.

Trouvaille will not focus on one specific kind of cuisine. Kmetz plans to serve a “seasonal menu with a craft cocktail focus.” The restaurateur adds “The menu will cover what I feel like cooking. It’s not going to be a menu that’s going to put me in a box.”

Kmetz wants the establishment to emphasize both high-quality cuisine and a welcoming atmosphere. He explains “It’ll be a casual, fine-dining setting. We’re going to polish the bar and do some painting and make it look nice.”

Kmetz is currently renovating the space. The building has housed a wide array of restaurants, which helps to minimize the work needed to create the entrepreneur’s vision. Kmetz is hopeful he will be able to open Trouvaille by February of 2024.
