Uchiko Bringing Fire-Forward Japanese Eats to Bethesda

Tyson Cole’s renowned restaurant is aiming to open in the region by late 2025.

Bethesda foodies will be able to close out 2025 by enjoying some of the most acclaimed sushi in the hospitality game. Uchiko, a concept from celebrated chef Tyson Cole, is making its way to Maryland later this year, reports the Washington Business Journal.

The concept-a splinter of Cole’s Uchi brand-is taking over 7315 Wisconsin Avenue. The 9,000 square foot space previously housed a Ruth’s Chris Steakhouse and will have seating for up to 200 customers. The restaurant will be broken down to include a full sushi bar, a cocktail bar, and a dining room with separate themes and tones.

A precise opening date is not yet available, but Uchiko’s Bethesda home should be ready to slice its eel by late 2025.

The eatery’s menu, described as “fire-forward interpretation of Japanese cuisine”, will hew closely to those of other locations, with wiggle room to curate certain dishes to the local appetites. Future regulars can look forward to a selection of superior sushi alongside dishes like wagyu beef ribs and grilled branzino. 

Uchiko currently has four locations open and in operation-3 in Texas and 1 in Florida. In addition to the Bethesda location, the concept-run by Hai Hospitality-is developing a Denver storefront.
