Cooper’s Hawk to Open Pizza-Pasta Concept

Continuing the company’s ‘by Cooper’s Hawk’ signature brand, Piccolo Buco will debut in Oak Brook in the first half of 2022.

Cooper’s Hawk has partnered with Rome’s Piccolo Buco to bring the pizza-pasta concept to Oak Brook under the name Piccolo Buco by Cooper’s Hawk, reports Nation’s Restaurant News. The concept marks the continuation of the ‘by Cooper’s Hawk’ signature brand, and Piccolo Buco is expected to open in the first half of 2022. A location has not been announced.

Neapolitan pizza and Roman-style dishes will be on the menu at Piccolo Buco, and many of the ingredients used in its kitchen will be sourced directly from Italy.

CEO Tim McEnery continues to evolve the Cooper’s Hawk brand and has reportedly introduced wine-themed trips to the brand through a program called Travel with Cooper’s Hawk. The soon-to-reopen Esquire by Cooper’s Hawk in Chicago will be the start of a chef-in-residencies series. And What Now Chicago recently reported on the ground-breaking of Illinois’ newest winery-restaurant location of the brand in Gurnee.

The company, which is headquartered in Downers Grove, opened its very first location in Orland Park in 2005. Today, Cooper’s Hawk operates over 50 locations across the country.
