Industry veteran Rob Bair is set to open a Detroit and Chicago-style pizza concept kitchen in late February or early March.

Bair’s SoDo Tin & Taco location features a catering kitchen that will be converted into the So Dough Pizza Co. The two restaurants will share a dining room and offer a diverse array of food.

It’s hard to decide between pizza or tacos, but Bair is bringing us a storefront that specializes in both.

Tin & Taco was opened in 2016 and had since become a popular location for craft tacos and beer. Bair decided to branch out into pizza because of inspiration from his upbringing.

With parents native to Detroit and Chicago, Bair knows how to craft the authentic pizzas unique to each city. “I grew up on both of those styles of pizzas,” Bair said.

During a phone conversation on Monday, Bair emphasized that serving genuine dishes is of upmost importance. “Growing up on that pizza my entire life, I wanted to recreate it and bring it to Orlando,” Bair said.

The menu will feature distinct offerings from both traditions.  So Dough Pizza Co. will be located at 419 E. Michigan Street.
