Gluten Off Bakery is filling the vacant Suite A at 9729 Fair Oaks Blvd. The new bakery, owned by husband-and-wife Konstantin and Anna Baburkin, will focus on serving gluten-free menu items and is anticipated to open in late November or early December.

The couple combined their personal experience with gluten-free diets and now bring their homemade gluten-free sourdough bread to the community after seven years of trial and error. The new bakery is filling the former space of Shabu Shima Japanese Hot Pot.

“My wife Anna and I, Konstantin, have been on a gluten-free diet for over seven years due to some health issues. I also react to dairy, so after a lot of experimenting, Anna perfected a recipe for gluten-free, vegan, non-yeast sourdough bread. We know many people are trying to make healthier choices or can’t tolerate regular bread, which inspired us to offer our products at the Midtown and Old Folsom farmers’ markets,” Konstantin Baburkin told What Now Sacramento in an email.

In addition to the menu available at the bakery’s current website, the menu will also serve additional gluten-free sandwiches, waffles, coffee, and tea. “Also, we are planning to continue collaborating with some other local gluten free and vegan vendors to offer their products at our place,” said Baburkin.

Once open, the bakery will tentatively operate from 9 a.m. to 6 p.m., Thursday through Sunday, with plans to extend hours as it grows. The owners also plan to continue participating at local farm markets after the bakery opens.
