A new restaurant on the southwest corner of East Rio Verde Drive and North Alma School Parkway will serve up sushi and other ocean-forward dishes in the coming months. Swan Sushi Seafood & Bar has applied for a liquor license at 28190 N. Alma School Parkway in northern Scottsdale, where it would likely be taking over the former Gatsby’s above Pony Express Cafe.
Representatives for Swan Sushi Seafood & Bar have not returned What Now Phoenix’s requests for comment, so an opening date is unknown. Based on the name of the business, however, we have a pretty clear idea of what to expect.
Perhaps a variety of maki rolls, nigiri, and hand rolls are what we have to look forward to. As for the seafood component, it is unclear whether this will be seafood dishes such as fish plates and pasta, or seafood boils of crab legs, lobster, and shrimp.
Looks like we’ll have to sit tight over the next several months to find out. Stay tuned.
