Founded on New York’s Upper East Side in 1984 by chef and entrepreneur Josefina Howard, Rosa Mexicano has expanded to cities like Boston, Arlington, and Burlington. The chain’s growth will soon land it on the Las Vegas Strip, with Rosa Mexicano’s first Vegas location planned for the Miracle Mile Shops at Planet Hollywood.
“Vegas is exciting, there’s so much going on,” Rosa Mexicano CEO Jim Dunn told What Now in a phone call on Friday. “We had Vegas on our scope for a long time, and then this deal came to our attention. We’re in the design phase.”
The Rosa Mexicano menu features starters like Camarones Diablos and Rosa’s Signature Nachos. A selection of ceviches centers seafoods like shrimp, salmon, and tuna; and Taco Plates come in varieties like Crispy Shrimp Tempura and Red Chile Chicken. Mains include a Roasted Half Chicken (Mole poblano, sautéed spinach, sweet plantains white rice, corn tortillas) and Tampiqueña (Grilled certified Angus Beef® NY Strip steak, cheese enchilada, Mexican rice, refried beans, queso fresco, guacamole, corn tortillas).
“We’re not Tex Mex,” Dunn said. “We’re authentic, everything is made from scratch. We have a great chef, Chef Manuel Trevino.”
