Stephen Sandoval Finds Permanent Home for Two New Concepts

Entre Sueños and Diego will replace Fogon in the Fall of 2023

Two new restaurants, Entre Sueños and Diego, are getting ready to debut later this year in West Town, located at 1235 W. Grand Ave.

Previously, What Now Chicago reported chef Stephen Sandoval wanted to take his pop-up Sueños and turn it into a permanent restaurant. Now, he tells the Chicago Tribune he found a site in West Town and is opening two new concepts. Entre Sueños and Diego are both expected to move into the former home of Fogon in Fall 2023. The former will focus on the chef’s take on the seafood-focused Mexican cuisine from Baja California, while the latter will have more of the casual dishes from Sueños.

“It will be a bit more elevated than what we had at the pop-up,” Sandoval tells the Chicago Tribune regarding Entre Sueños. “Diego will be where you’ll find the fish tacos and the Diego burrito from the pop-up. You’ll also find things like a chilaquiles torta.”

Sandoval first launched Sueños within the SoHo Gouse in July 2022, intending to operate for six months. After high praise from visitors, Sandoval decided to extend the pop-up, recently revealing he will remain at the location until May 2023. Once that closes, Sandoval will focus on getting his permanent locations open. While nothing is set in stone, a first floor could hold up to 75 visitors, and the second floor will likely host private events. Danielle Lewis has been brought in to design the cocktail menu.

“I’m doing a big menu change soon,” Sandoval tells the publication. “We are going to try some new ideas to test what our opening menu is going to look like.”
