Tamir Erdenebat and his partner, Nisaa Karim, have been in the restaurant industry for about ten years. The couple founded Elephant Sushi, which began in Russian Hill and grew to five locations before it was sold in 2019. After taking a short break, they opened — and currently operate — Sancha Sushi.
Sancha Sushi now has two locations, one in North Beach and another in Castro, and both offer vegan options, however, the couple’s newest concept, Vegan Sancha Sushi, will be the pair’s first entirely vegan restaurant. The eatery is coming to 564 S Van Ness Avenue and will join establishments on the block like Irma’s Pampanga, Slate Bar, and Maruya.
Erdenebat tells What Now San Francisco that the decision to open a vegan spot was based on the encouragement and support of patrons at Sancha Sushi, where the vegan menu has been appreciated.
Vegan Sancha Sushi will feature reservation-only seating at a chef’s counter, capable of seating about 15 people and allowing for interactions with the chef.
In addition to options like vegan sushi rolls, makis, and stuffed tofu pockets, the restaurant will offer a full sake and wine menu, Japanese beer options, and a selection of nonalcoholic cocktails.
Erdenebat and Karim predict an opening early in the summer of 2023.
