Internationally acclaimed chef José Andrés is bringing Zaytinya, his beloved Mediterranean restaurant with locations in New York City and Washington, D.C., to the Las Vegas Strip. Zaytinya Las Vegas will open in the Forum Shops at Caesars Palace, according to recent coverage by Eater Las Vegas. Another as-yet-unknown concept is headed to the Shops at Crystals.
“When Andrés opened Zaytinya in Washington D.C. in 2002, it immediately became a celebrated mainstay of D.C. dining with its high-ceilinged 400-seat space and menu that draws on Greek, Turkish, and Lebanese influences,” says the Eater coverage.
Zaytinya’s Washington, D.C. location’s main menu centers Flat Breads like Soujouk Pide (spicy soujouk sausage, kasar cheese, 65° egg), Seafood Mezze like Octopus Santorini (grilled Mediterranean octopus, marinated onions, capers, yellow split pea purée), and Meat & Poultry Mezze like Lamb Baharat (spiced rubbed lamb leg kebab, tabbouleh, charred tomatoes, tahini sauce). It’s unknown yet what new creations the Forum Shops location may bring.
What Now reached out on Monday to Zaytinya concept chef Michael Costa to inquire about the details of the Las Vegas location’s menu. Costa declined to comment.
