While expansion plans for the 26-year-old rice & noodle-bowl company (Tokyo Joe’s) are currently in their infancy, CEO of Salad Collective, Darden Coors, told What Now Denver they’re hoping to first “wrap their arms around everything” before possibly licensing at non-traditional locations like airports and colleges. The chain currently has 24 units in Colorado, including Denver, Wheat Ridge, Littleton, Fort Collins, Centennial, and more.
In conjunction with the merger, Darden Coors will replace Larry Leith as CEO of Tokyo Joe’s; Leith plans to dabble in other projects after assisting the fusion. “The company said the rest of Tokyo Joe’s leadership team and support staff will remain with the brand,” claims an article by Restaurant Business.
The Coors family acquired MAD Greens in 2013, more than doubling their units since then with Darden Coors as CEO. Six years later, the company also acquired Snappy Salads before rebranding as Salad Collective. Now, with Tokyo Joe’s on the roster, the family behind the famed brewery and AC Restaurant Group “will operate 65 company-owned restaurants out of the Golden headquarters.”
