The intersection of South Rainbow Boulevard and West Cougar Avenue will soon be home to a new restaurant offering coffee and dessert. Cafe Laon will open its doors at 8635 S Rainbow Blvd this summer, a representative of the cafe told What Now on Wednesday.
Cafe Laon will open in a 1,780-square-foot space, serving a variety of coffee drinks and a dessert menu that centers the Croffle, a croissant-waffle hybrid, and milk-based shaved ice (called bingsu in South Korea, where the Croffle was first popularized). The furniture and interior have yet to be arranged, the representative said, but the space can be expected to seat about 36.
The South Rainbow Boulevard location is part of a small retail center that is also home to The Base Dance Center and a Dotty’s location. The location’s immediate surroundings have a low density of food and drink spots, although there are several restaurants a bit further north on Rainbow, include Dirt Dog, Pho Aimie, and The Sparklings.
No set opening date has yet been determined for Cafe Laon, the representative said, but it is working toward an opening in the second week of July.
