Founded in Layton, Utah in 2003, Mexican restaurant chain Costa Vida Fresh Mexican Grill is preparing to make its Las Vegas debut. The chain, which has more than 90 locations currently in operation, will open its first Nevada restaurant in the University District this summer, at 808 E Flamingo Road, near the intersection with South University Center Drive.
Costa Vida offers a build-your-own menu featuring burritos, enchiladas, quesadillas, tacos, nachos, salads, and Baja Bowls, served up with protein choices like Sweet Pork, Shredded Barbacoa Beef, Grilled Steak, Grilled Chicken, and Raspberry Chipotle Chicken. There are toppers like Black, Pinto, or Refried Beans, salsas, and more.
“We source the highest-quality ingredients and make our recipes from scratch every day,” says the Costa Vida website. “Our thoughtfully crafted menu items make you feel nourished and good, not ready for a siesta.”
Opening in the East Flamingo Road location, Costa Vida will be situated east of the Atomic Museum, part of a restaurant community on Flamingo Road that includes restaurants like Lotus of Siam and Jack in the Box.
What Now reached out on Friday to Costa Vida CEO Dave Rutter to inquire about plans for the opening. Rutter was not immediately available for comment.
