Fabio Trabocchi Opening Fiola Mare at Wynn Las Vegas

The Michelin-starred, James Beard Award-winning chef will launch Fiola Mare in early 2025

Fabio Trabocchi, the world-famous Michelin-starred and James Beard Award-winning chef, is opening a restaurant at Wynn Las Vegas next year. Fiola Mare will replace Lakeside, a seafood restaurant which is set to close at the resort this month, according to recent coverage by the Las Vegas Review-Journal.

Fiola Mare already has locations in cities like Washington, DC, and Miami, but this is the restaurant’s first location on the West Coast.

“Fiola Mare celebrates Fabio Trabocchi’s Love for the life by the sea,” says the brand’s website. “This dreamwork is inspired by Italy’s coastlines and the bounty of its most pristine seafood. The Adriatic Sea and Fabio’s native coastline of Monte Conero, the world-renowned Amalfi Coast, Sicily, and Forte Dei Marmi, are the inspiration of our menu experience featuring the fines crudos, seafood towers, delightful salads, handmade pasta, and our signature “Carello del Pesce,” a seafood cart featuring the daily best catch from Italy and all over the world is showcased at your table.”

The RJ coverage says the Wynn location’s décor “draws on the abundance of the sea, custom maritime-inspired elements, and new furnishings influenced by French and Italian design of the 1940s and ‘50s.”
