After much success with his bagel business at local farmers markets (see: selling out 200 bagels), Miles Odell will open a brick-and-mortar spot. The Denver Post reported that he will open Odell’s Bagels at 3200 Irving St.

The space has become available recently after the departure of Denver Bread Co. It is a bit west of the Highlands neighborhood, in the middle of a busy residential area and next to Highland Park.

A highly acclaimed chef, Miles was originally going to open a Japanese concept, but switched after gaining popularity with his pop-up bagel stands. He has been working on a bagel recipe for over a decade, he told the Post.

Odell’s Bagels will serve hand-rolled, naturally leavened bagels made with locally milled flour. It will have all the classic options, breakfast sandwiches, and as well house-smoked salmon, trout, and whitefish options.
