From food stand to food trailer, Birria Bros will soon begin offering its Mexican birria dishes to the Las Vegas area. Birria Bros is still waiting on a final inspection next week. If all goes well, the grand opening could be held in late March or early April.
Birria Bros is family-owned and operated by brothers Ken and Jason Espinoza, and Jason’s wife Sierra. Birria Bros uses a home-style recipe of birria that has been in the Espinoza family for years. Some menu items include tacos, nachos, and ramen dishes.
The three together started selling take-out orders from a food stand in August 2020 after most of them lost their jobs during the pandemic, Birria Bros told What Now Vegas in an email.
They used social media to gain followers, and in June 2021, they began working out of a commissary kitchen. Through strict financial discipline, Birria Bros was able to make enough profit to purchase a fully-equipped 8×16 trailer to serve customers.
Co-owner Ken Espinoza said they will participate in festivals and would like to find an established spot for the food trailer. Eventually, they want to open a brick-and-mortar location.
