New Mexican Restaurant to Replace Hearthstone Kitchen & Cellar at Red Rock

Red Rock Casino Resort and Spa continues its resort-wide transformation

After nearly a decade spent at Red Rock Casino Resort and Spa, Hearthstone Kitchen & Cellar will offer its last day of service on April 30. The resort has announced that Hearthstone will be replaced by a new Mexican restaurant, according to recent coverage by the Las Vegas Review-Journal.

The RJ coverage says its source shared a possible name: Ondas, which means “waves.” However, the name is said not to be certain yet.

The news comes after a long series of changes in what has been called an “ongoing property-wide transformation” at Red Rock, which has recently seen the debut of a new Lotus of Siam location, Naxos Taverna, and Rouge Room Lounge. Rouge Room, like the upcoming Mexican restaurant concept, represents a partnership with Wish You Were Here Group, headed up by owner Nick Mathers.

“We are excited to expand our partnership with Red Rock Casino Resort & Spa following the successful launch of Rouge Room. Wish You Were Here Group will introduce a Mexican restaurant to the property with a scheduled opening in fall of 2023,” Nick Mathers told the Review-Journal.

What Now reached out to Mathers on Friday regarding the planned restaurant. Mathers was not immediately available for comment.
