Offering sandwiches with fresh ingredients on baked-daily bread, Urbane Cafe has leveraged its growing fandom into more than thirty locations in California. The brand expanded last year with a new location in Henderson, its first in Nevada and its first outside its home state. A second Nevada location is now in the works, at 7132 S Rainbow Boulevard in Las Vegas, with an expected opening this September, CEO Tom Holt told What Now on Thursday.

“Our niche is on the side of healthy fare,” Holt said. “I think that makes this a great opportunity. My wife and I are always looking for something healthy in Vegas.”

The brand’s Henderson opening showed that the valley is looking for healthy food too. Vegas is often reduced to the Las Vegas Strip—not exactly a setting known for healthy food—but Urbane Cafe is finding much more in the valley.

“We went around Henderson, and we loved the community. We felt such a good vibe that we knew we had made the right choice. You can immediately feel that there’s more to Las Vegas than the Strip. And we were really happy to see that community involvement.”

Urbane Cafe’s sandwiches include the Ahi Poke Sandwich (sashimi grade ahi tuna, pickled white radish, crispy onions, pickled carrots, green leaf lettuce, chipotle aioli. Topped with sweet sushi sauce and creamy wasabi aioli), the UC Banh Mi (roasted chicken, cilantro, cucumbers, pickled carrots, fresno chilis, pickled white radish, sweet chili aioli) and the Chimichurri Steak (tri tip steak, housemade chimichurri sauce, feta, arugula, cranberry chutney aioli). Alongside these are a variety of salads, bowls, and a soup of the day.

“We do our bread from scratch, right in front of our guests in a fired oven. The concept is about wanting feel good about what you’re eating, and feel good afterward,” Holt added.
