Honest Mary’s, the Central Texas-based healthy fast casual brand, will soon be opening in the Mueller neighborhood of Austin, according to a recent filing with the State of Texas. The restaurant will be located at 2021 Aldrich Street, near eateries such as Marufuku Ramen and Kerbey Lane. It will be the young chain’s fourth location.
Articulating its mission statement on their website, Honest Mary’s declares “our aim is to positively impact countless lives through life-giving fast food. We emphasize honestly good ingredients, beautifully designed restaurants and genuine hospitality.”
Honest Mary’s features a simple menu, revolving around bowls with different configurations of ingredients that represent different palettes. For example, the Smoky Poblano bowl consists of basmati rice, wild arugula, spicy corn, pickled onions, Texas goat cheese, avocado, pumpkin seeds, creamy poblano sauce, and lime wedge. For a more oceanic flavor, one could order the Aloha Poke, which consists of hand-line caught poke, basmati rice, avocado, asian slaw, edamame, pickled onions, fresh organic jalapeños, black sesame seeds, sesame vinaigrette, and lime wedge.
What is notable about the development, apart from being a local chain, is that the plan review estimates construction will reach completion in late December 2023, covering 2,392 square feet of space and an included “new free-standing shading structure of 1219 sq ft,” according to the public records examined by What Now Austin.
What Now Austin reached out to Founder Nelson Monteith to inquire about the upcoming location and its potential opening dates, but he was not immediately available for comment.
