Snooze, an A.M. Eatery plans to open its first Pflugerville restaurant at 18725 FM 685, Building 1, Suite 230, according to a project filing registered with the Texas Department of Licensing and Regulation.

CEO Josh Kern told What Now Austin the restaurant will open in June 2027.

What Now Austin previously reported on plans for Snooze at this address in 2024. The new filing describes a 3,420-square-foot restaurant inside an existing building, with an estimated build-out cost of $1.2 million. Construction is scheduled to begin January 15, 2027, and finish May 28.

Brothers Jon and Adam Schlegel founded Snooze in Denver in 2006. The name for the concept came from Jon’s habit of hitting the snooze button on his alarm. Today, the chain operates nearly 70 restaurants across 10 states.

Snooze serves breakfast and brunch, with pancakes, egg dishes, and breakfast tacos and burritos. Customers can also order coffee, espresso drinks, and brunch cocktails.
