Local alternative meat start-up, Top Protein, is looking to open a flagship restaurant at 2607 Edgewater Drive, in the buildings formerly occupied by Outpost and Jabbers. The menu will feature Top Protein’s impressive and innovative catalogue which includes chicken, burgers, seafood, veal dishes, pizza, and a craft energy drink bar.

Nowadays, alternative meats and cheeses come from a wide variety of sources, from mushrooms and soy beans to peas and cashews. Top Protein, however, has pioneered a new approach – producing meat with milk from cows, water buffalo, sheep, goats, and even camels.

“We have developed a proprietary process which economically and sustainably produces high quality, high value protein from naturally sourced dairy,” Mark Brandjes, Top Protein’s chief financial officer tells What Now Orlando. “ Our process requires ‘no-kill’ and provides 33 times the meat from a single livestock unit. The extremely high protein yield greatly reduces production of greenhouse gases and minimizes environmental impact.”

Brandjes goes on to explain, “Using an innovative, natural process, there is no need for genetic engineering or laboratory cell cultures. [And] flavor profiles are controlled during the process and allows for the production of a tremendous variety of different flavors and textures.”

In addition to the upcoming restaurant, Top Protein currently sells their products wholesale and producing and selling “upcycled energy drinks” made from “co-product liquid,” all of which aligns with the company’s zero process waste commitment.
