Sorekara, a chef-led Japanese concept, will soon open in Baldwin Park, according to a recent report in Orlando Weekly. The restaurant will be located at 4979 New Broad St, occupying the space of the former Galeria Restaurant.

Chef William Shen, will be at head of the project, bringing his years of experience as the executive chef of the former 12-seat French-Japanese omakase restaurant Ato in New York City.

“Sorekara will be nothing like Ato or what I did at Mila,” Shen tells Orlando Weekly. “It will offer a completely different level of imaginative cuisine.”

Flanking Shen will be local restaurateurs and brothers Johnny and Jimmy Tung who founded the popular pan-Asian chain Bento Asian Kitchen + Sushi.

Articulating the rationale behind the location, Jimmy Tung tells Orlando Weekly “Baldwin Park has an amazing lakefront and lakes are so much of what makes Orlando Orlando.”

“Miami has its beaches, but Orlando has its lakes and when people from all over the world visit this restaurant, we want them to bask in the beauty of Orlando, as well as the restaurant.”

What Now Orlando reached out to Jimmy Tung to inquire about the restaurant’s potential opening dates, but he was not immediately available for comment.
