A Someburros has signed to the Roosevelt Commons project in Buckeye, according to ABC15 Arizona.

The project as a whole is being developed by Scottsdale-based SimonCRE, and entails retail stores and restaurants across 93,000 square feet.

Owned and operated by Tim Vasquez, this exact location of the Mexican chain has not been disclosed yet, but will be at the southwest corner of Verrado Way and Roosevelt Street.

Their website shares the following origin story: “Every dish on the Someburros menu tells the unique story of the Vasquez family and Poncho’s, their first restaurant which opened in South Phoenix in 1972 and showcased the family’s signature, time-tested recipes for authentic Sonoran-style Mexican food. The popularity of Nana Isabel’s dishes, such as her famous tacos and her red and green chili beef, quickly spread throughout the Valley. In 1986, Isabel and her husband, Eusevio’s son George, and his wife Mary opened the first Someburros on Mill Ave and Baseline Road in Tempe.”

Customers can expect these menu options: specials, combos, burritos, chimichangas, tacos, salads, bowls, quesadillas, traditional favorites, kids choices, breakfast, dessert, sides, and drinks.

An opening date has not been announced, but the development is said to be starting construction by January 2024.
